For National Student Money Week, we’re bringing you tips about how to save money and live on a budget. All this week we are sharing some of our favourite and most affordable recipes. Continuing the curry theme (see yesterday’s recipe) today we’ve got a lentil daal to get your taste buds tingling!
Lentil Daal
Curry is one of the most popular dishes in the UK and there can be nothing better than a take away from your local curry house after a night out, or with house-mates for a “house night in”. However, take-away food can really break the bank, with the average British person spending £1,320 a year on fast food!
Enjoy the delicious aroma and flavour of a home made daal, for a fraction of the cost. This recipe is also super healthy.
Ingredients:
1 onion
2 cloves crushed garlic
2 cups of red lentils
3 teaspoons turmeric powder
3 tablespoons curry paste
Handful of quartered mushrooms
1 tomato
Some other veg of your choice (broccoli, green beans, kale work well)
3 tablespoons fat free plain yoghurt
Method
- Wash the lentils
- Boil and simmer lentils with the turmeric powder
- At the same time, fry the onions and garlic in a deep frying pan or wok
- Add all the veg
- Add curry paste (you can use your own spices instead if you prefer)
- When the lentils have softened, add them to the frying pan and let simmer for five mins
- Add the chopped tomato and stir in for a couple of minutes
- Add some natural yoghurt right at the last minute and loosely stir into the curry
- Serve with pitta bread or rice
