DESCRIPTION:I am very happy to be able to announce our confirmed line-up of speakers for our SBS Hospitality Symposium 2019\, which we are hosting at Sheffield Hallam University on Wednesday 3rd April 2019. \n  \nWe are starting the day with an engaging mini-conference on the theme of ‘Sustainability in Hospitality’\, which will include a series of talks from industry leaders on the subject of sustainability. This should prove to be a most valuable few hours of knowledge sharing on how hospitality businesses can achieve and benefit from greater levels of sustainability. This is set to double by 2034. \nEvery day approximately 8 million pieces of plastic pollution find their way into our oceans. \nhttps://www.sas.org.uk/our-work/plastic-pollution/plastic-pollution-facts-figures/ \n  \nOnly about 9% of plastic produced has been recycled\, 12% has been burned and the remaining 79% has ended up in landfills or the environment. \nDiscarded plastic is harming the marine environment and impacting on low income communities living by polluted rivers. \n  \nHere are some more facts about plastic: \n\nOver the last ten years we have produced more plastic than during the whole of the last century.\n\n\n50 percent of the plastic we use\, we use just once and throw away.\n\n\nEnough plastic is thrown away each year to circle the earth four times.\nWe currently recover only 5% of the plastics we produce.\n\n\nPlastic accounts for around 10 percent of the total waste we generate.\n\n\nThe production of plastic uses around eight percent of the world’s oil production (bioplastics are not a good solution as they require food source crops).\n\n\nPlastic in the ocean breaks down into such small segments that pieces of plastic from a one liter bottle could end up on every mile of beach throughout the world.\n\n\nAnnually approximately 500 billion plastic bags are used worldwide. DESCRIPTION:Mick Hood – HR Director\, Liberty Steel\nSBS Advisory Board Member\, Sheffield Hallam University \nMick Hood has worked for 37 years in the steel industry starting as a Technical apprentice in 1979 at Stocksbridge part of British Steel Corporation.\nMick qualified as a Metallurgical Technician in 1984 with a HNC at Sheffield Polytechnic and has held various technical and operational roles since then.  He obtained his MBA at Aston Business School\, graduating in 2004.\nHe moved into HR in 2000 and has held various roles including a spell working in various UK locations.\nSince 2008 Mick had held the role of H.R. Director for the Speciality business within Tata Steel covering South Yorkshire\, West Midlands\, the North West and China.  Recently he has taken the role as HR Director\, Liberty Steel in the UK. \nJodie Marshall – Managing Director\, A Mind Apart Theatre Company Limited\nEntrepreneur in Residence\, Sheffield Hallam University \nJodie Marshall is the founder and Managing Director of A Mind Apart Theatre Company. \nA Mind Apart is a social enterprise working with children\, young people and adults with the aim of making performing arts accessible and providing safe spaces for people to grow and develop through performing arts. \nJodie also works as a consultant\, coach and mentor within the third sector\, social business sector and supporting small businesses (with particular interest in supporting creative businesses). During her tenure the organisation was recognised as a Business Superbrand.  Previously\, Sally was a director at international PR agency\, Weber Shandwick. \nSally is also a trustee of the perinatal mental health charity\, Light\, and is a qualified athletics coach. \nWill Harper – Restaurant Manager\, The Ivy (York)\nExecutive in Residence\, Sheffield Hallam University \nWill Harper is the restaurant manager of The Ivy in York. Will oversees the day to day service of the restaurant and is responsible for the standard of service the waiting team deliver and the experience of the guest. The Ivy is the busiest restaurant in York and take pride in offering the best service therefore it is not always a simple job. \nWill started in fulltime hospitality with Malmaison Liverpool upon leaving University and worked with the company for over five years across Malmaison and Hotel Du Vin progressing to Acting General Manager. \nFood and Beverage is his passion and after another role which was more food and beverage orientated in another hotel he decided to make the move to stand alone restaurants. \nWill was presented with an SBS alumni special recognition award in 2015 for his support and contribution to Sheffield Business School. \n  \n

DESCRIPTION:Michelin starred chef returns to host pop-up restaurant at Hallam \nMax Fischer\, the founder of Michelin starred restaurant Fischer’s at Baslow Hall\, is returning to Sheffield Hallam University to host a pop-up restaurant – with this year’s emphasis on using local suppliers. \nMax\, whose restaurant has held a Michelin Star since 1994\, will again host ‘A Taste of Fischer’s’ at the University’s Hallam View restaurant on Friday 8 and Saturday 9 March. \nThe event will be staffed in the kitchen and front of house by Sheffield Business School students\, who are studying hospitality business management. \nThe menu has been put together using as many locally sourced ingredients as possible. \nThey include meat from Whirlow Hall Farm and Moss Valley Fine Meats\, dairy ingredients from Our Cow Molly and cheese from Sheffield Cheesemasters\, made with Our Cow Molly milk. \nA variety of fresh fruit and vegetables from a range of local growers will also be used and the chefs are working with food hub Regather to source as many ingredients locally as possible. \nJames Ellerby\, senior lecturer in hospitality business management\, has organised the event for the last three years. \nJames said: “This year we are focusing on celebrating our local producers and suppliers in Sheffield and the surrounding area. Working with Max on these pop-ups for the last two years has shown just how important and rewarding it is to engage with and support local businesses. The menus at Fischer’s restaurant constantly change with the seasons and they are a celebration of British produce. \n“We want to expand on this value further this year and really champion our local producers wherever possible\, and local independent suppliers where it is not. We want to promote the great food and drink our region has to offer\, and demonstrate how exciting and sustainable buying local produce and supporting local businesses can be. \n“Sheffield Hallam prides itself on contributing to the economic growth of the region and this is just one example of how the University does that.” \nHe added: “It is not just local businesses that we are celebrating but also our SHU alumni\, too. Sophie Williamson obtained her Masters at SHU before going on to set up Sheffield Cheesemasters. Max Scotford from Bullion Chocolate is also a recent graduate and his award-winning chocolate\, made here in the city\, will also feature.” \nMax said: “I really enjoy doing it. We need young people who are enthusiastic and enjoy the industry. This is a great way to show them the industry and what is out there in the world. DESCRIPTION:Purpose of the Event \nThe Inspirational Student Awards are an opportunity for the faculty to recognise those students who inspire others and who embody what it means to be an SBS student. Nominations close on the 11th February for the 2019 awards and we would like to take this opportunity to invite all staff within SBS to vote for the award winners on the 6th March. \n  \nThis event is a chance to celebrate those shortlisted and to have your say on the winners for 2019 so please come and join us on the 6th March. \n  \nHow will the event work? \nThe voting this year is taking place in City View\, Owen Building level 12 and will be a rolling event so you can attend when you’re available. When registering your interest\, select a suitable admission time and allow half an hour to an hour time for attending. \n  \nWhen you attend there will be a registration desk and you will be given an iPad (or similar device) for casting your vote. Around the room will be the shortlisted nomination forms for you to review at your leisure. This year’s symposium examines the challenges for destination marketing which relate to a range of issues linked with a destination’s external macro environmental factors\, competitive forces\, resource management\, product development\, branding\, and differentiation. Destinations are widely acknowledged as being both pivotal to the tourism system and extremely complex products which are difficult to market and manage effectively. In remaining competitive\, destinations are faced with many challenges associated with increasing visitor numbers and expenditure\, providing satisfying\, memorable experiences that link key brand values and assets with the aspirations and needs of target markets\, while enhancing the well-being of destination residents and preserving their natural capital. \n  \nOne of the key challenges associated with the scale of the product is the fragmentation of ownership and the lack of overall control which can undermine the implementation of a strategic approach to marketing the destination as an entity. As such\, destination marketing organisations (DMOs) play a critical role as a unifying force in relation to harnessing the component parts of the product\, forging partnerships and alliances and both co-ordinating and representing stakeholders. Most tourism destination products are not unique and competitive advantage requires innovation and creativity to survive and grow in an increasingly global and dynamic market\, but innovation is linked with uncertainty\, risk\, cost and potential for failure. In a destination context\, effective leadership is therefore critical for ensuring that brand values extend through both strategic relationship building and consistent communication with stakeholders. \n  \nAt this year’s symposium\, we have presentations from three eminent speakers: Dr Philip Stone from the University of Central Lancashire\, Chris Brown\, Director of Marketing Liverpool and Professor John Lennon from Glasgow Caledonian University; they will provide valuable insights into the challenges for destination marketing from a range of perspectives. He is internationally recognised in the field of ‘dark tourism and difficult heritage’ having presented keynotes at conferences across the UK and continental Europe\, North America\, Asia\, and Australasia. Dr Stone also acts as a Media Consultant to over thirty national and international print and broadcast media outlets\, including BBC TV & Radio\, CNN\, Der Spiegel\, The New York Times\, Huffington Post\, The Guardian\, and the New Scientist. He has a PhD in Thanatology and has published extensively in the area of dark tourism and difficult heritage\, including The Darker Side of Travel: The Theory and Practice of Dark Tourism (2009); Tourist Experience: Contemporary Perspectives (2011); The Contemporary Tourist Experience: Concepts and Consequences (2012) and The Palgrave Handbook of Dark Tourism Studies (2018). His forthcoming books will be Dark Tourism and Difficult Heritage: Childhood Encounters and The Business of Dark Tourism: Managing Difficult Heritage. \n  \nChris Brown is a graduate of the University of Strathclyde\, Glasgow and having worked in a number of Hotels as a General Manager he changed course to work in destination management in 1999. Initially he worked for five years at The Mersey Partnership as Director of Tourism\, Director of Operations and interim Chief Executive before taking the role of Chief Executive at Marketing Cheshire\, formerly Visit Chester and Cheshire\, in 2004. \nHe returned back to Liverpool in 2013 to establish Marketing Liverpool and to promote the city as a first-class destination for visitors\, investors and students. Chris is also responsible with its key partners in promoting the Liverpool brand nationally and internationally. He is a keen follower of all things Scotland and continues a long held ambition to finally see the country win something. \n  \nJohn Lennon is the Dean of Glasgow School for Business and Society\, Glasgow Caledonian University www.gcu.ac.uk/gsbs/  and is responsible for the management and leadership of 170 academic staff and the education of over 5\,000 undergraduate and postgraduate students. Professor Lennon is the also Director of the Moffat Centre for Travel and Tourism Business Development which is responsible for the production of international consumer and market research in tourism. The Moffat Centre funds scholarships for students wishing to study Travel and Tourism www.moffatcentre.com. Since 1999 over £1\,000\,000 worth of scholarships has been awarded to students of travel and tourism. In the commercial sector of travel and tourism John has undertaken over 700 tourism and travel projects in over 50 nations on behalf of private sector and public sector clients. John is the author of seven books and over 80 articles and numerous reports on the global hospitality\, travel and tourism industry. \n  \nPeter Schofield is Professor of Tourism and Services Management at Sheffield Hallam University. He was educated at universities in Manchester and New York\, and is a founder member of the International Academy of Culture\, Tourism and Hospitality Research. Peter has published extensively in\, and reviewed for\, a range of international journals. Before entering academia\, he worked as an airport operations manager in San Diego and Manchester. His main research and consultancy interests are in consumer decision making\, disordered gambling and shopping behaviour\, destination and events marketing\, and service failure and recovery. His work has informed government\, DMO and hotel management decision making in relation to tourism development\, destination marketing and customer services.

SUMMARY:Developing a Publication Strategy
DESCRIPTION:The writing and publishing of research accounts is a rewarding\, yet challenging\, part of a researcher’s life. In recent years\, much emphasis has been placed upon publications in peer-reviewed journals\, in particular CABS listed ones. However\, an exclusive focus on one kind of publication and few publications outlets not only has many disadvantages\, but it is neither feasible nor desirable for many research active colleagues. In this workshop we will discuss how to develop a publication strategy which reflects a more inclusive approach and takes factors such as timelines\, targeted audiences\, career aspirations\, institutional contexts etc. into account. \n  \nIndicative topics are: where and what to publish; editing and editorial roles; timelines; targeting audiences; the role of books; other media; authorship (sole\, multiple\, first or last\, does it matter?); aligning one’s outputs with the institutional projects (e.g. REF\, AACSB). \n  \nThe workshop is facilitated by Professor Susanne Tietze and includes some exercises through which colleagues can start to develop a publication strategy. \n
